<p>Give this classic salad an Easy As gourmet makeover with a Queensland twist.</p>

<li>4 baby potatoes</li>
<li>2 eggs</li>
<li>Handful green beans, ends trimmed</li>
<li>Queensland Mackerel fillets</li>
<li>Salt and black pepper</li>
<li>Olive oil</li>
<li>1 baby cos or baby gem lettuce</li>
<li>10 black or Sicilian olives</li>
<li>3 red radishes, sliced</li>
<li>10 cherry or baby roma tomatoes, halved</li>
</ul>
<p>Dressing</p>
<ul>
<li>2 tbsp olive oil</li>
<li>1 tbsp lemon juice</li>
<li>1 tsp Dijon mustard</li>
<li>1 tsp honey</li>
</ul>

<p><!-- /divi:list --><!-- divi:paragraph --><strong><u>How to make</u></strong></p>
<p>Place potatoes and eggs in a medium saucepan and cover with water. Bring to the boil. Remove eggs and set aside to cool. Cook potatoes for another 10 minutes, then add the beans and cook for a further 5 minutes. Drain both and set aside.</p>
<p>Season the Queensland Mackerel fillets with salt and pepper to taste. Heat 2 tbsp of olive oil in a frying pan over medium heat. Add mackerel, skin side up and cover with a lid. Cook for 5 minutes. Cut potatoes in half. Turn the fish over and add halved potatoes to the pan. Cook, uncovered for a further 3-4 minutes, until the fish has turned white and is flaky in the middle and the potatoes are golden.</p>
<p>Meanwhile, arrange the cos lettuce leaves on a platter or divide between two plates. Peel eggs, cut in half and place on top of the lettuce. Add beans, olives, sliced radishes, tomatoes, and potatoes. Arrange fish on top. Dress with a simple dressing made by mixing the olive oil, lemon juice, mustard and honey.</p>

<p>Lemon + Herb oil</p>

<li>¼ cup flat leaf parsley, finely chopped</li>
<li>1 lemon sliced</li>
<li>1 tbsp capers</li>
<li>1 anchovy fillet</li>
<li>1 tsp red pepper flakes</li>
<li>½ cup pitted kalamata olives, sliced</li>
<li>Salt and pepper to season</li>

<p>Preheat the oven to 180C and line large baking tray or dish with baking paper.</p>
<p>Put all the ingredients for the lemon + herb oil in a bowl and mix.</p>
<p>Place the fillets of Queensland Mullet on the baking tray, skin side down, and season with a little salt and pepper.</p>
<p>Spoon over the lemon and herb oil evenly over each of the fillets, making sure they are completely covered and bake for 20-25mins, until the flesh flakes easily when<br />pressed in the centre with a knife.</p>
<p>Serve immediately, with a fresh green salad and some potato fries. Y-U-M.</p>

<p>This super tasty flatty with a simple salad is an easy as way to get more Aussie seafood into your weekly routine.</p>



<p><strong><u>Ingredients</u></strong></p>



<ul class="wp-block-list"><li>8 x 100g Australian Flathead fillets &#8211; we’ve used fillets with the skin-on, but skin-off works too</li><li>2 tablespoons of olive oil&nbsp;</li><li>a knob of butter</li><li>sea salt&nbsp;</li></ul>



<p><em>Broad bean and fennel salad&nbsp;</em></p>



<ul class="wp-block-list"><li>500g frozen broad beans, cooked and lightly crushed&nbsp;</li><li>2 baby fennel bulbs, thinly sliced&nbsp;</li><li>2 tablespoons olive oil&nbsp;</li><li>2 tablespoons lemon juice&nbsp;</li><li>1 teaspoon crushed fennel seeds</li><li>¼ cup mint leaves&nbsp;</li><li>sea salt and freshly cracked black pepper&nbsp;</li><li>fresh lemon wedges to serve&nbsp;</li></ul>



<p><em>Lemon yoghurt&nbsp;</em></p>



<ul class="wp-block-list"><li>1 ½ cups greek yoghurt&nbsp;</li><li>1 tablespoon lemon juice&nbsp;</li><li>1 tablespoon lemon zest&nbsp;</li><li>2 teaspoons chopped mint leaves</li></ul>



<p><strong><u>How to</u></strong></p>



<p>Kick things off by prepping the broad bean and fennel salad: add all the ingredients to a bowl, season,&nbsp; and toss to combine. Ta da, the salad’s done!</p>



<p>To make the zesty lemon yoghurt: combine the ingredients in a bowl and give it a stir.</p>



<p>Now for the main event – the fish! Pat the flatty fillets dry with absorbent paper, and heat a large non-stick pan over a medium-high heat. Toss in the olive oil and a knob of butter, wait for the butter to bubble, then add the fish, in batches, skin side down and cook for 4 minutes. Flip it and cook for another 1-2 minutes.</p>



<p>Now it’s showtime. Place the flatty fillets on a plate, add some salad and a dollop of your lemon yoghurt. Done. Easy peasy lemon squeezy.</p>

<h2 class="wp-block-heading">Ingredients</h2>



<ul class="wp-block-list"><li>2 portions (approx. 260g) Tassal salmon fillets, skin-on, cut into 4cm cubes</li><li>1 tbsp olive oil</li><li>½ red capsicum, cut into 3cm squares</li><li>½ yellow capsicum, cut into 3cm squares</li><li>2 medium zucchinis, ribboned</li><li>1 lemon, juiced and zested</li><li>2 tbsp fresh parsley, finely chopped</li><li>1 tbsp fresh oregano, finely chopped</li><li>lemon wedges to serve</li></ul>



<h2 class="wp-block-heading">Method</h2>



<p><strong>STEP 1</strong></p>



<p>Thread salmon, capsicum and zucchini ribbons onto skewers.</p>



<p><strong>STEP 2</strong></p>



<p>Combine lemon juice and herbs and half the olive oil in a bowl and brush over the kebabs. Allow to sit for 10 minutes.</p>



<p><strong>STEP 3</strong></p>



<p>Heat a grill pan, skillet or bbq on high heat. Add the remaining olive oil and cook kebabs 2-3 minutes on each side.</p>



<p><strong>STEP 4</strong></p>



<p>Serve with lemon wedges, tzatziki and Greek salad.</p>
