<p><span style="font-weight: 400;">4 golden shallots, finely diced</span></p>
<p><span style="font-weight: 400;">250 ml (1 cup) aged red wine vinegar</span></p>
<p><span style="font-weight: 400;">Cracked black pepper</span></p>
<p><span style="font-weight: 400;">1 lemon (into wedges)</span></p>
<p><span style="font-weight: 400;"><strong><u>Method</u></strong></span></p>
<ul>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Finely dice shallots and place in a small mixing bowl.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Pour over red wine vinegar then leave to sit for 2 &#8211; 3 hours.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Spoon half a tablespoon of onion dressing over each oyster just before serving.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">A little squeeze of lemon and a crack of fresh black pepper to garnish.</span></li>

<p><span style="font-weight: 400;">750 mL Champagne or sparkling wine</span></p>
<p><span style="font-weight: 400;">1 lemon, juice only</span></p>
<p><span style="font-weight: 400;">2 mandarins, juice only</span></p>
<p><span style="font-weight: 400;"><strong><u>Method</u></strong></span></p>
<ul>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">In a small saucepan combine champagne, sugar, lemon and mandarin juice.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Heat until all sugar has dissolved but do not  bring to the boil.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Pour into a wide base tray and place into freezer for approx. 4-5 hours.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">When the granita is frozen scratch the mix with a fork to fluff it up.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Spoon onto oysters just as you serve. </span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Garnish with the zest of a lime if desired.</span></li>

<p><span style="font-weight: 400;">1/4 cup Tomato Sauce</span></p>
<p><span style="font-weight: 400;">1/2 Tablespoon Worcestershire Sauce</span></p>
<p><span style="font-weight: 400;">1/4 teaspoon Tabasco</span></p>
<p><span style="font-weight: 400;">1 tablespoon fresh parsley, finely chopped</span></p>
<p><span style="font-weight: 400;">150g Rock salt for baking</span></p>
<p><strong><u>Method</u></strong></p>
<ul>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Preheat grill.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Place the shucked oysters on tray of coarse rock salt.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Combine tomato sauce, Worcestershire sauce, tabasco and chopped parsley in a bowl and mix thoroughly.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Spoon half a tablespoon of sauce on each shucked oyster.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Cut prosciutto into thin strips and evenly divide onto each oyster.</span></li>
<li style="font-weight: 400;" aria-level="1"><span style="font-weight: 400;">Place the tray under the grill and cook for approx. 2 minutes or until the prosciutto colours and oysters are cooked.</span></li>

<p>Place ice on a one or two large plates or and arrange seafood on top. We recommend starting with the big ticket items like the Queensland Tropical Rock Lobster and Moreton Bay Bugs, then using the Queensland King and Tiger Prawns to fill any remaining spaces. If you’re using picked Spanner Crab meat it’s a good idea to place it in a bowl and fan your prawns coming out around it.</p>
<p>Cut 2 lemons and 2 limes in half. Heat a large frying pan or grill pan over high heat and sear the lemon and lime halves, cut-side down, for 2-3 minutes until juicy and caramelised. Cut the remaining lemon into wedges and place around the seafood. Serve with tartare, Asian dressing, sweet chilli and lime sauce &#8211; all are available straight off the supo shelf so you can sit back and enjoy!</p>

<p>Preheat oven to 180°C. Line a baking tray with baking paper and place the Queensland Barramundi fillets skin-side down on the paper.</p>
<p>In a small bowl mix together the miso paste, maple syrup and olive oil to form a smooth paste. Baste the fish with the paste, spreading in an even layer over the top and bake for 18-20 minutes until the fish is white and the paste golden.</p>
<p>Meanwhile, finely slice cucumber and place in a small bowl. Add crushed garlic and sesame oil and mix well.</p>
<p>Once cooked, divide rice between serving bowls and top with the miso maple Barramundi fillets, add the cucumber salad and serve.</p>

<p>The hype around Singapore Chilli Crab is well-deserved. Discover it for yourself, with this Easy As make-at-home take on the classic recipe using fresh Queensland Mud Crab.</p>

<p>Heat oil in a large heavy-based pot set over medium heat. Add Thai chilli jam and cook, stirring, for one minute, or until fragrant. Add passata, tomato sauce and water, stir and bring to a simmer, this’ll take a couple  of mins.</p>
<p>Using the back of a knife, or your hands if you’ve got some muscle, crack the large claws on the Queensland Mud Crab to break the shell. Add the large claws, cover the pot with a lid and simmer for 4 minutes. These are the biggest part of the crab, so they take a little longer than the rest. Add remaining crab pieces, stir through the sauce, cover with a lid and simmer for 5 minutes.</p>
<p>Transfer crab to the serving dish, add vinegar to the remaining sauce. Crack in an egg and using a spoon quickly stir it around the sauce. Pour the sauce over the crab, garnish with coriander.</p>
<p>Serve with steamed bao buns and rice. Chuck on some extra bao buns, they&#8217;re perfect for mopping up the sauce.</p>

<li>¼ cup white vinegar</li>
<li>¼ cup olive oil</li>
<li>2 tbsp sesame oil</li>
<li>3 tbsp sugar or honey</li>
<li>¼ tsp ginger powder</li>
<li>1 cup water</li>
<li>1 red long chilli, sliced finely</li>
<li>½ bunch fresh coriander,<br />stalks chopped, leaves whole</li>
</ul>
<p>Steamed rice and greens, to serve</p>

<p><!-- /divi:list --><!-- divi:paragraph --><strong><u>How to make</u></strong></p>
<p>Preheat the oven to 200°C. Place the Queensland Coral Trout in a large baking dish that will fit the whole fish and be able to hold the sauce. Using a sharp knife score the fish skin across, about 5mm into the flesh and about an inch apart.</p>
<p>In a large jug mix together the soy sauce, vinegar, olive oil, sesame oil, sugar or honey, ginger powder. Add water, sliced chilli and finely chopped coriander stalks. Pour the sauce over the fish. Bake in the pre-heated oven for 20-22 minutes. The fish should be white and flaky when it’s done.</p>
<p>Remove from the oven and transfer to a serving dish. Pour the sauce over the fish and garnish with coriander leaves. Serve with steamed rice and steamed or stir-fried greens.</p>
