Ingredients
- 1 kilo large green prawns, peeled tails intact
 - 1 cup cornflour
 - 1 cup self raising flour
 - 1 ½ cups chilled soda water
 - Vegetable oil for deep frying
 - 6 finger limes, halved and pearls removed
 
Fennel salt and pepper
- 2 teaspoons fennel seeds
 - 1 teaspoon black peppercorns
 - 2 teaspoons salt
 
Samphire salsa
- 1 cup fresh samphire, roughly chopped
 - 3 cornichons, finely chopped
 - 1 tablespoon of chopped mint
 - 1 tablespoon of chopped parsley
 - 2 tablespoons lemon juice
 - ¼ cup olive oil
